Excuse me a minute... Tripe and chitlins (which are the lining of the stomach and the intestines of cattle or pigs) are Southern staples. Tripe is particularly flavorful, but must be pressure cooked to make it edible. Never cared for chitlins, but tripe is very good. Has a flavor all its own.

There are those in UK that will eat raw tripe with vinegar - not something that ever appealed to me

I have noticed that - food staples in UK like steak and kidney pie (or pudding), liver (nice with onions) and braised hearts are just not available. Cold sliced tongue can be good too available in most supermarkets in UK. Haggis with turnips and washed down with whisky is a good meal.
